Mini Meatball Subs

I made the most delicious sandwiches last night! And I'm proud of me because I'm not a cook by nature, it's just one of those things I wasn't blessed with skills in, hehe. But I made this recipe up and it turned out great! I just wanted to share this because these were soooooo filling, low points, and really, really good. They got the non-WW husband's seal of approval. :)

I know most (or all?) of you aren't Weight Watchers people, but these are healthy either way. :) Just to compare...2 of these sandwiches equals 5/6 points on WW, depending on how much meat you put on them. (That's about 10" of sandwich.) A 6" meatball sub at Subway is 12 points. So you get 4" more sandwich for half the points (which means about half the calories and fat.) Yay! :)


Mini Meatball Subs - 2.5 points each

You'll need:

  • Hot Dog Buns - 1 point each (I prefer Healthy Life Wheat Buns for 1 point each.)

  • Turkey Meatballs - 3 for 1 point (See recipe below.)

  • Spaghetti Sauce - 0 points (I used Hunts canned.)

  • Kraft Free Shredded Mozarella - 1/4 c. for 1 point


The rest is simple! Place 3 meatballs inside each bun (or 1 point's worth). Cover with a few spoonfulls of sauce. Sprinkle 1/8 c. cheese on top. That's it!

I ate two for 5 points, and was really, really full. The meatballs are delicious and leftovers can be used in spaghetti, or for more sandwiches. :) If you want more meat, I'd recommend adding 1 1/2 meatballs to each of two sandwiches, for a total of 6 points.

Microwave Ground Turkey Meatballs
1 lb. lean ground turkey 12 pts
1/2 c. seasoned dried bread crumbs 04 pts
1/2 egg beater (equiv. 1 egg) 01 pt
1 tsp. salt 00 pts
1 tbsp. Worcestershire sauce 00 pts
1 tbsp. dried minced onion 00 pts

 

17 pts


Mix all ingredients together. Shape into small balls, a little less than 1" diameter. (If you make 51 balls, you'll get 3 meatballs for 1 point, but you can make whatever size you like, and figure points by dividing 17 by the total number of balls you make.) Just remember to keep them small so they don't overload the hot dog buns.

Place balls in a circle in two 9" or 10" glass pie plates. Cover plates with wax paper.

Microwave on high for 8-10 minutes, rotating plate and turning meatballs over once or twice during cooking.

You said "balls" a lot in this post...sorry, that was funny! ;P Seriously, though, that's a good recipe that I could get Sean to eat (I wouldn't be able to tell him that it's healthy, though!)
